Les Boulangeries-Pâtisseries à Paris : À la fois un reflet et une transformation d'identité française par rapport aux populations immigrées

Completed in December 2013, this paper is the culmination of field work done over the course of four months in Paris. I interned in a pastry kitchen, conducted interviews with the pastry chefs, and engaged in observation in bakeries around Paris in order to write this ethnographic report. In this thirty page paper, written entirely in French, I examine how an imagined French identity is constructed and reflected by bakeries. I employ concepts of semiotics to understand how language and imagery are used to index a pre-immigrant "French France", while bakeries simultaneously act as a realm in which the French national identity is transformed to include foreign and immigrant populations through politics of production.
